7,800 feet Above Sea Level
I find that the sun is very bright here…I know this is obvious…being in a high desert plateau. I was warned.

I do not think I will ever get over how big and open everything feels here. I am in amazement most of the day. Today the sun was very fierce and the temperature rose to 55 degrees. We decided to start the day with chores rather than breakfast. It was nice walking around and feeding/checking all the cows while the sunrise met us.
Today was going to be a bit slower than the last two. I made some sauerkraut/sour beets after breakfast. Amy is really into fermented or “living food” currently and she shared a few recipes. We had three HUGE beets from a friend and we decided they would be better off fermented. I volunteered to spend the rest of my morning chopping and shredding the beets, carrots, and cabbage. I pounded the juice out of them and added salt, red pepper flakes, and oregano. They are in a couple jars fermenting now. We’ll see in about 2-3 weeks whether I did it right.
At last, we made it south to the corral that we started setting up yesterday. We finished the work and will use it on Monday for sorting and loading animals. The rest of my day has been calm. I checked the herd at 5 and no one looked like they were going to have a calf tonight. I did get a bit worried when I looked towards the east corner of the paddock where there is a lot of brush and saw a brown figure in the distance. I marched over there and found that the brown cow was on the other side of the barbed wire fence and she did have a young calf with her though.
Tomorrow, I’m going to work a half day and then head over to Penitente Canyon with some friends of the ranch who I also met during my interview. I’m looking forward to seeing this neat canyon.
